It was during my last trip to Cameroon , that I learned this n or Cameroonian pepper recipe . Starting to buy my braised fish one evening in the streets of Biyem-Assi, the saleswoman served me the fish with 2 accompanying sauces: a green sauce and a pepper sauce ! My order was to take away, so it was at home that I discovered the taste 😋
The sauces were so good that I absolutely had to be eaten at the saleswoman to ask her for the recipe . Fortunately, she agreed to give it to me, and today I give it to you too.
Pepper condiments: ingredients
This African pepper recipe is therefore 100% Cameroonian. Here we use Cameroonian spices as the secret, the AKPI (Njansang) for example.
For those who do not know the secret: it is a very popular brand of spices in Cameroon . The secret consists, I believe, of African spices such as pebe, rings, etc. And it enhances the taste of dishes.
Apart from spices and obviously chili, we will also need leek, garlic and onions as ingredients.
How to prepare a good chili?
This African pepper sauce recipe is super easy to prepare. After crushing everything together, just cook the mixture.
The whole thing is played at the time of cooking , because the peppers must cook for a long time over low heat. It took me 30 minutes almost just for cooking. So I added a little water 2 to 3 times during cooking to avoid burning
And at the end, when you notice that the water has dried well and that the chilli is already clinging to the bottom of the pot, it is necessary to add oil. Let fry for a few minutes , adjust the seasoning of the salt before turning off the heat. In short, the complete recipe is at the bottom of the article as usual 🙂
I still want to recall here that in my kitchen I do not use the seasoning cubes , so do not be surprised when you will see that there is no cube in the list of ingredients. But feel free, to add if you want! The saleswoman told me that she also added the cube.
With what to serve his chili?
I serve my pepper sauce, almost with everything! Whether with braised fish , braised chicken , lamb dibi , in short the grills in general, but also with donuts , like cassava or banana donut . It's also very good! 😋

African pepper sauce recipe
Ingredients
- ¼ tsp. powder washer
- ½ tsp. White pepper coffee
- ½ tsp. secret
- 6 garlic cloves
- 6 red spice
- 6 Akpi seeds
- some leek branch
- 2 onion
- 2-3 c. oil
- salt
Instructions
- Using a crushing stone or a small mortar start first by crushing the AKPI seeds in dry
- Then crush all the ingredients together with a little water. Water should just cover the ingredients barely
- Cook for 30 minutes over low heat. Just add very little water 2 to 3 times during cooking. just to prevent the chili from starting to burn
- After 30 minutes, as soon as you have noticed, that the chilli begins to stick in the bottom of the pot, pour the oil and let fry 1 to 2 minutes
- Adjust the seasoning by adding the salt
- Serve cold with grills or donuts. Enjoy your food
