Batch Cooking + Meal Prep: We will do 3 dishes in 55 minutes!

I am launching a new section in the blog , the meal schedule or Meal Prep . This is the first time that I have made this kind of posts, so if you have comments or suggestions, do not hesitate to tell me in the comments. I would be very happy to read you.

I share with you how I organize myself at home during the week . I don't always have time to cook every night when I come back from work, and even if I have to do it I don't want to do more than an hour in the kitchen . So what I do is prepare my menus in advance whether for noon and for the evening.

In this post series; I explain how I do , the meals I choose are inspired by African cuisine, it's clear 😉. But they are also influenced by my preferences to me and my fiancé. He loves meat and suddenly, you will notice over the weeks that I put a lot of protein in my menus. All that to say, that feel free to readjust the menus in relation to your taste and your family. 

Let's prepare the menus of the week together, we will do three dishes in 55 minutes!

This menu goes from Monday to Friday , on Saturday usually we finish the rest of food from week to noon and usually go out in the evening. So no kitchen!

On Sundays, I used to cook a traditional meal that still takes time, but while the meal is simmering in fire, I take advantage to start my preparations of the week , like making marinades or cutting vegetables, meat etc ...

The dishes as such, I generally cook them on Monday evening. 

In my menus, I make sure I always have at least 1 vegetarian dish , without meat with a lot of veggies. (Even as it is the fight with my fiancé, for him a meal without meat is not a meal .. lol). I also make a small mix of the slightly consistent dishes and light dishes . Friday is my grilled day . Oven meals are super fast to do 😉 ...

In this menu we will have: 

  • Chicken dg
  • 2. potato pié
  • 3. Fonio sautéed with shrimp (the vegetarian dish)
  • 4. DIBI in the oven
  • 5. Sautéed from turkey
  • 6. Wrap

Preparation to do the day before

  1. Peel the apples : once peeled, immerse the potatoes in a bowl of cold water until they are used. They thus keep two days in the refrigerator.
  2. Cook the black beans (tip soak a few hours before with hot water so that the seeds soften)
  3. Fry the plantains and set aside in a well closed jar
  4. Cut carrots and green beans
  5. Make the green seasoning : crushed just together garlic + onion + basil green or parsley + pepper and ginger. I do a lot for about 2 weeks!

  • Cut and marinate meats : you can use a small green seasoning game to marinate. Without forgetting the shrimps also that just need salt, and a powder garlic! Close tightly and leave cool

 Little tip : when I want to peel a large amount of garlic, I dip them for a few minutes in hot water and then peel them

We launch the preparations the next day (Monday evening)

Turkey stir, DG and Fonio use almost the same ingredients, and have almost the same preparation base. So I'm going to cook them at the same time. parallel

Ingredients : 

  • Vegetables (tomatoes, onion, green and red pepper)
  • Green seasoning

 Preparations from the day before to use: 

  • fried plantains
  • Cut carrots and beans
  • A Green Season
  1. Put the meat to the fire in 2 different pots 
  2. Meanwhile, we cut all the remaining vegetables together. Which takes time like carrots and green beans you have already done the day before.
  3. Cook the steam fonio
  4. make the shrimp fries 

The meats are cooked, the fonio too . The vegetables are all cut, and the shrimps are fried. You can start cooking.

Tip: I try to put the pots on fire at the same time. So make sure that all your ingredients are already ready and placed on the table . So when I start frying the onions for example. I do it 3 times in a row, at the same time.

Tip: sorry to cook on a medium heat , see low! Otherwise you will burn everything 😂 when you have 3 pots on the fire at the same time, it is possible that you get confused. Do not hesitate to change the homes sometimes and lower the heat to other preparations when you want to focus on 1 pot for example.

At this stage if the fonio is already ready.

Take advantage to clean the kitchen and wash the plates !!!

The 3 meals are cooked and the kitchen is clean !!!!! 😉

What you have to do on weekdays

My preparations:

  •  cooked beans 
  •  peeled potatoes. 

I have to do this at the latest Tuesday, since I peeled the apples on Sunday! If you haven't peeled the apples, you can cook them at the end of the week, but it will take a little more time 🙂

All I have to do on Tuesday is to cook the apples and beans together with red oil and chili . Then I just pile 🙂

Wednesday noon: Cook the rice

Boil a little rice to accompany the sautéed turkey 😊

Friday: wrap at turkey (lunch) + dibi in the oven (evening)

I love wraps, especially at noon 😋. It's easy, fast and so good . I have not yet presented this recipe in the blog. But don't worry, it's not difficult.

I use the rest of my turkey to flavor it all . So I don't need to embarrass myself to make a special Wrap sauce ... I also add what I want inside as eggs, salad, tomato, lawyers ...

Wrap in fire
Instructions :
  1. Make an omelet, pour a little into the pan
  2. Add a wrap to the omelet, let fry then return
  3. Add the salad, turkey, cheese and what you want, tomato, sweet corn, cucumber ...
  4. After about 1 minute, remove from heat and roll

Easy and ready in less than 15 minutes for noon!!!!

Here is the grill of the week : the DIBI. It's simply the braised lamb at the madman

The recipe is also very easy. We just season the meat with salt and pepper and then hop we put in the oven. During cooking, I make a small green sauce and I make the fries of plantains. At the big max 1 hour and it's good 😋

Small note on the midday meal on Monday:

  •      Monday omelettes recipe will soon be available on the blog . I'm not talking about any omelet without character, huh? A good omelet busy with tuna, a lot of vegetables and well spicy. My mother taught me this way of frying the eggs very recently when I was in Cameroon
  • I just took a little fries of plantains in my preparation of the day before , which I warmly warmed in the oven. So think of frying a little more plantain the day before
