If you often miss what to do with your too ripe bananas, what this recipe is for To To Maison ... Some call them, Banana donut , others call them corn donut ... which lets us guess very easily the flagship ingredients of this recipe: corn flour and bananas.
Cameroon corn donuts:
The corn or makala (another Cameroonian appellation) remains one of my favorite recipes especially when they are accompanied by a spicy sauce 😋 ... Aah what a pleasure to go home while holding your pack of donuts just out of their frying bath and wrapped in newspaper. Not without having previously answered the ritual question of the saleswoman: "I pepper?" "Lol
These donuts are so soft, and generally sweet naturally because of the use of very wall bananas, in addition to that the addition of corn brings an almost incomparable texture.
How to make corn donuts?
There are several ways to make this recipe, others only adds the corn ... Others make the mixture with wheat flour, but adding more wheat than corn. In this recipe, I add more corn than wheat flour. The wheat flour is just used to swell the dough thanks to the yeast and thus have a fairly light and a little elastic paste.
Corn donut
Ingredients
- 4 Very ripe yellow bananas
- 150 g of corn flour
- 100 g of wheat flour
- 100 ml of water
- 1/2 TSP SEL
- 2-3 TBSP of sugar
- 1/4 Fresh baked yeast cube
Instructions
- Dilute the baker's yeast in a small glass of water (100ml). To book.
- Crush the peeled bananas with a fork
- Add the sugar, salt, the 2 types of flour and mix well.
- Add the dilapidated yeast in water. Mix well and cover with a tea towel and let the dough minimum 1 hour or even two hours.
- Here is the result after about 1 hour. The dough should double in volume.
- Heat frying oil, take portions of dough using a tablespoon and gently slide them into the oil using another spoon. Personally I make the donuts directly by hand from which their very round shape, but it requires a little practice
- Brown the donuts until they are brown. Drain then on absorbent paper
- Serve warm accompanied by a spicy sauce or with a hot boullie

Thank you for your comment. For bananas, I cannot exactly tell you what number of kg exact you need. So used just 4 bananas. Even if the weight varies, it does not matter. For baking powder, it's 1/4 of 42 g
