In Congo they are called Mikate , Cameroon : Flour or Puff Puff for the English -speaking part of Cameroon and therefore also in Nigeria . Bofrot is the Ghanaian , Gbofloto/Beautiful floating in Côte d'Ivoire , Yovodoko in Benin . In short, I even made a list:

How to get these donuts:

To succeed in your donuts, you just have to make sure to do these 3 things well:

  • First of all, you have to choose the right yeast .
  • Then find the exact balance between water and flour and
  • Finally, succeed in frying . The oil should be hot enough!

Which yeast to choose?

For yeast, I use the fresh baker's yeast . A cube equivalent to 42 grams, equivalent for 1 kg of flour. If you don't find it, or if you want to use dry yeast, know that a bag of about 7 to 8 grams is enough for 500 grams of flour .

What amount of water to use for my donuts?

So that you can always find your own measures. Here is a little advice that could help you: know that the difference between flour and water should never be less than or equal to 50 grams . If you use for example 400 grams of flour, never exceed 350 ml of liquid.

 And even if you would like your donuts to be really soft, and that you still choose to use 350 ml of water, you must really control the tip of the frying with your hands. Your dough will be really liquid and if you do not know how to form the pretty balls, your donuts will not be very beautiful at the end 😅. I still stay in the 320 ml of water for about 400 grams of flour.

How to get the fried donuts?

For frying, it is important to fry the donuts with enough oil. The oil must cover the donuts during the frying.

Make sure that you are hot before you start frying. Me my trick is to test the temperature of the oil by first frying a donut. If the oil is not hot enough, the donut will remain at the bottom of the stove. On the other hand, if the oil is hot enough, the donut will rise directly to the surface. And then the hop, you can start frying.

Ingredients
  

  • 400 grams of flour
  • 320 ml of lukewarm water approximately, do not exceed 350 ml of water.
  • 1/2 Cube of fresh yeast or sachet of 7 grams of dry yeast
  • 90-100 grams of sugar
  • 1/2 C. Coffee of salt
  • frying oil
