Wali wa nazi-east african-inspired coconut curry rice

Wali wa nazi means Coconut Rice (coconut rice) in Swahili language. Swahili is spoken throughout East Africa and in part of Central Africa. It is the national and official language in Tanzania, Kenya and the Democratic Republic of Congo.

Wali Wa Nazi is therefore simply a dish of cooked rice in a combination of coconut milk and water. It is generally seasoned only with salt, and milk is naturally extracted from nuts.

Here I had to buy coconut milk already done, to make my recipe, because I could not find coconut. Many people confuse coconut milk, with coconut juice. No, it's not the same thing, coconut milk is obtained by grating or crushing coconut flesh.
If you want to make coconut milk from dried coconut, it's very easy. Heat the water in a kettle until it is hot. Don't boil! When the water is hot, pour the water with the grated coconut in a blender. Let the mixture stand for about 2 to 4 minutes before starting to mix. Mix with high intensity for 2 to 4 minutes. Good back to our recipe, rice ... This dish is so delicious and very simple to make. Here, I added other spices such as cumin, curry and coriander and I first fled these spices to release the flavors, before slowly cooking the rice in a tasty coconut milk sauce.

Ingredients
  

  • 600 g Basmati rice
  • 800 ml of coconut milk
  • 2 onions
  • 1 tbsp cumin
  • 2 tbsp curry
  • 1 tbsp coriander
  • 2 salt pinch
  • 1 TSP black pepper and cayenne pepper
  • 1 optional cube
  • 1 tbsp oil or coconut oil

Instructions
 

  • Prepare your ingredients, and measure your spices.
  • Cut your onions.
  • First of all, grill your spices. Heat a dry frying pan and roast your cumin and coriander dry for 1 to 2 minutes, until the aroma is released. Remove from fire and set aside
  • Add the coconut oil to a casserole dish, and when it is hot and over medium heat, fry your onions for a few minutes until they are tender and colored. Add your toasted spices….
  • Then your curry powder and let fry for a minute for another.
  • Put your coconut milk
  • Then add the broth cube, salt and pepper
  • Reduce the light to high-moiever, add the rice and cover and simmer for 20 to 25 minutes
  • Serve with a tomato sauce and meat… .. good appetite

Notes

When you simmer the rice, make sure your heat settings are set to a low-moyen. This will allow the rice to cook in coconut milk before the milk is completely evaporated.
Check the rice every 5 minutes, and if the coconut milk is completely dry and the rice is not well cooked, you can add a little water, reduce the heat to low and simmer covered.
