Stir Fried Fonio

Sautéed fonio

The cereal, the oldest in Africa with multitudes of virtues. In this recipe, the fonio is simply cooked and then jumped with a few vegetables, and shrimps. An easy and quick recipe, and so delicious

Ingredients

  • 300 grams of fonio
  • 2 carrots
  • 100 grams of green beans
  • 200 grams of shrimp
  • 300 ml of water
  • 4 garlic cloves
  • 5 tsp. oil
  • 1 tomato
  • 1 bell pepper
  • 1 onion
  • 250 grams of soft corn
  • some parsley
  • 3 tbsp optional soy sauce
  • salt, pepper

Instructions

  • Soak the fonio in 200 ml of water
  • Let swell for 10 minutes then add 2 tablespoons of oil
  • Put in the heat, for steam cooking for 10 minutes. And then remove from heat
  • In a small glass of water, dissolve salt and sprinkle the liquid in the half -cooked fonio
  • Form a small space in the middle, to add carrots and green beans. Return the fonio to steam for 10 other minutes
  • Meanwhile, cut your tomato vegetables, peppers, and onions
  • In a small bowl, mix your shrimp with crushed garlic, salt and pepper.
  • In a pan, add a few drops of oil and brown the shrimp in the oil. Fry for about 3 - 5 minutes, until it is golden
  • Remove the shrimp from the heat, and now add the onions and the cut peppers. Simmer for 2 minutes
  • Then add the cut tomato, and simmer for 2 minutes
  • Add 3 tablespoons of soy sauce, salt and pepper and add the cooked fonio with its carrots and green beans
  • Simmer 3 to 5 minutes, then add the shrimp, then the soft corn and finally the finely cut parsley
  • Serve
