Foutou banana / Ghanaian FUFU

It is a couscous made from plantains and cassava. Very popular in Ivory Coast. But also in Ghana. It is generally accompanied by clear sauce.

Ingredients

  • 2 Cassava tubers
  • 4 - 5 Plantains
  • water

Instructions

  • Peel the plantains and cassava.
  • Cut the cassava and plantains into small cubes to pound easily later.
  • In a pot start by putting the plantain, then cassava and rest assured to cover the pot with water. The water must be either at the same level that the content is slightly overflowing.
  • After about 15 minutes of cooking, check the cooking of the cassava and plantain with a fork. If cassava and plantain can be split easily, it is because it is ready.
  • Pour the surplus of water and allow the plantain and cassava to dry for a few minutes
  • In the mixer robot, start by crushing only cassava, to the point of taking a paste and then remove. Then crush the plantain, and finally mix the 2 always using a mixer robot
  • After mixing well, trying to form smooth balls using a hollow plate, wetting your hands regularly in the water to prevent its glue
