Jollof or Jollof Rice rice in English is undoubtedly the most popular dish in West Africa. It is a very appreciated festive dish that we often serve during weddings, parties and other large gatherings

Ingredients
500gramsof rice
1literof water including chicken juice to cook the rice
4tumor
5concentrated tablespoon
1or 2 pepper
3red pepper
bay leaves
3onions to crush
1Big onion to cut for the sauce
1onion to cut to cook the chicken
1tsp.curry
1tsp.coffee thyme
a little ginger
5garlic cloves
some branches of parsley

Instructions
Step 1: Cook the chicken
Make a small marinade: crush onions, parsley, garlic, ginger, chili
Boil the chicken with the small marinade of Step 1. Add the cut onion, salt and pepper. Cover the chicken with water
After 15 minutes, drain the chicken and keep the juice
Heat a little oil in the pan and fry the chicken
Step 2: Make the tomato sauce
Crush the tomatoes, red peppers and onions all good
Cook the mixture, in a small pot apart. Cook the tomatoes for at least 10 minutes, the water should dried
Step 3: Do the Jollof
In another pot, heat a little oil
Fry the onion until the onions are caramelized
Add the concentrated tomatoes and fry 2 to 3 minutes
Then add the tomato and pepper mixture cooked beforehand. Season with curry, thyme, bay leaves.
Pour the chicken juice. rectify the seasoning by adding a little salt and pepper more
Add water and rice
Cover the lid with aluminum foil before closing the pot
Cook for 15 minutes without stirring and opening
Serve hot with chicken on top
