So I take you to East Africa with this easy potato recipe, also called Viazi Karai locally . The "viazikarai" (also spelled "viazi karai") is a popular snack in Kenya and other countries in East Africa. It is a Swahili word that means "potato bhajia" or " potato fritters "
How to make potato donuts, Viazi Karai?
The recipe is super easy and anyone can make it at home 🤗. You will just need potatoes and some spices .
The ingredients to keep your potato donuts!
- Potatoes : Main ingredient of this dish, the potatoes are peeled and cut into pieces which are then mixed with the frying dough and fried to create crispy donuts.
- Wheat flour or other gluten -free flour of your choice : this ingredient is the base of the frying dough which covers the potatoes.
- Turmented powder : a spice that gives Viazi Karai its bright yellow color and brings another flavor to it.
- Salt : adds flavor to the dough and enhance the flat of the dish.
- Red chili powder (or cayenne pepper) : add spice to the dish. The quantity used can be adjusted according to personal preferences.
- Rosemary : a spice that still adds apple flavor. Here I boil the apples already with cumin and onion.
- Water : Used to prepare the frying dough of Viazi Karai.
- Powdered garlic (optional): which enhances the general taste of apples
- Coriander leaves : used as a garnish, coriander leaves add a fresh and lemony flavor to the dish.
- Oil (for frying) : Used to fry the Viazi Karai until they are crisp and golden. For frying, you can use any type of vegetable oil with a high smoke point, such as canola oil or peanut oil.

The principle is simple, the pieces of potatoes are first prepare . Then, filled with a spicy sauce , then dipped in a paste mainly with flour, and spices before being fried.

Viazi Karai - Kenyan Snack
Ingredients
- 1 TSP SEL
- 1 TSP Romarin
- 1/2 onion
- water
- 6 potatoes
- 2 TSP Pepper powder
- 1/2 Optional lemon juice
- 1 salt pin
- 100 g flour
- water
- 1/2 TSP Curcuma
- 1 Powder garlic tsp
- frying oil
Instructions
- Peel your potatoes. Put water, salt, rosemary and onion and let it boil. Boil your potatoes until they are almost ready. Do not let them become completely soft because they will collapse when you cut them
- In a small bowl or a cup, mix your flour, ground garlic and turmeric with a little water. Normally, the golden yellow color of Viazi Karai is obtained using a food coloring, but I decided to use turmeric.
- Make sure it reaches the consistency of a thick yogurt.
- In another small bowl, press the half-citron, add the powder and salt chili.
- Make a small crack on the apple to add the spicy sauce
- Then dip the apples in the dough and fry
- Accompany the apples with a sauce of your choice. Bon appetit.
