Jollof rice

Jollof Origin rice

On social networks, there is a little war between the Nigerians and the Ghanaians to find out who has the best recipe for Jollof Lol. Yet at the base Jollof rice does not even come from Ghana, from Nigeria.

The Jollof Rice would come from the Senegambia region. Centuries ago, wolofs or jolofs (people in the Senegambian region) invented this delicious rice dish. In the mid -1400s, the Portuguese introduced tomatoes and, of course, local populations have not lost time to make good use of it.

Jollof Rice Recipe

Jollof Rice in West Africa

As I said above, the dish comes from Senegambia, more precisely even in Senegal . There, this dish is called the tieboudien rice or ceebu jen. It is even their national dish! To prepare it, they use rice (it is clear), onions, tomatoes, fish, and the particularity is that they also add many other vegetables such as cassava, and eggplant for example.

Some ingredients

I do not know how it is produced, but the dish has therefore spread in other African countries over time. So each country has its version and each country has therefore been able to add a unique touch. So we have: Jollof rice from Cameroon, Ghana Jollof rice, Liberia's Jollof Rice, Jollof Rice from Sierra Leone, fatty rice also in Ivory Coast which is the equivalent of Jollof, and finally the Jollof rice of Nigeria. In Nigeria this dish is so popular, and appreciated, that there is also another version called “Party Jollof Rice” in Lagos. Party Jollof Rice is Jollof but cooked in very large quantities in wood fire. It seems that the taste is therefore different, due to the cooking mode

Jollof Rice Ghana vs Nigeria

As I said even above, there is a small battle between Ghana and Nigeria, to find out which country cooks the best Jollof Rice. And you know me, I love this kind of subject on African food. I wanted to know more and I even asked myself what is even the difference between the 2

What is the difference between Nigerian Jollof and Ghanaian Jollof?

Jollof Rice
  • The main difference is at the level of the choice of rice . In Nigeria we use rice with long grain, and in Ghana we use basmati rice.
  • Unlike the Nigerian Jollof, the Ghanaian Jollof has a higher composition in tomato taste . He adds more tomatoes to the recipe
  • The Ghanaians also add meat to tomato sauce to create a fleshy tomato flavor in the Jollof.
  • The Ghanaian Jollof is not as spicy because it uses less spice than the Nigerians

These are some small differences that I have read on the subject!

Some tips for succeeding in his Jollof Rice

  • There is a reason why the peppers are red lol. If you want your rice to have this beautiful red shade, the tomato will not be enough . You have to use the red peppers!
  • When you fry the onions in the oil at the start, let them caramelize to get a better flavor.
  • Take your time with sauce because it is the most essential step when cooking. The tomato sauce must be well cooked, until you see a little oil that goes up above, before you add the rice.
  • The secret of a good rice is a saucepan with an airtight cover . So everything must be well closed. I use aluminum foil to cover my cover. To properly keep the heat.

  • Another secret for a good Jollof rice is not to use the “Parboiled Rice” (or staked rice?! Anyway, I don't know if I have translated well. I talk about the rice that sticks quickly, and which cooks faster). Choose a good rice . I use basmati rice.
  • Rice is cooked on very low heat

  9. Hello, the dish really makes you want,
I would like to make the recipe but there are two points that I do not understand.
When you say for the tomato sauce
"crush the tomatoes, red peppers and good together" I do not understand the sentence and the other point when you talk about the chicken marinade you crush the onions and then when you boil them the chicken you say with "green condiments" do you talk about what green condiments? It is on two points that are not clear to me. Thank you in advance for your answer.
