It is simply rice with long grain spicy with tomatoes, onions, red pepper, garlic and thyme, then simmered in a delicious chicken broth to have a dish full of flavor. Yummm 😋
Jollof Origin rice
On social networks, there is a little war between the Nigerians and the Ghanaians to find out who has the best recipe for Jollof Lol. Yet at the base Jollof rice does not even come from Ghana, from Nigeria.
The Jollof Rice would come from the Senegambia region. Centuries ago, wolofs or jolofs (people in the Senegambian region) invented this delicious rice dish. In the mid -1400s, the Portuguese introduced tomatoes and, of course, local populations have not lost time to make good use of it.
Jollof Rice in West Africa
As I said above, the dish comes from Senegambia, more precisely even in Senegal . There, this dish is called the tieboudien rice or ceebu jen. It is even their national dish! Some tips for succeeding in his Jollof Rice
- There is a reason why the peppers are red lol. If you want your rice to have this beautiful red shade, the tomato will not be enough . You have to use the red peppers!
- When you fry the onions in the oil at the start, let them caramelize to get a better flavor.
- Take your time with sauce because it is the most essential step when cooking. The tomato sauce must be well cooked, until you see a little oil that goes up above, before you add the rice.

The best Jollof rice recipe
Ingredients
- 500 grams of rice
- 1 liter of water including chicken juice to cook the rice

Instructions
Step 1: Cook the chicken
- Make a small marinade: crush onions, parsley, garlic, ginger, chili
- Boil the chicken with the small marinade of Step 1. Add the cut onion, salt and pepper. Cover the chicken with water
- After 15 minutes, drain the chicken and keep the juice
- Heat a little oil in the pan and fry the chicken
Step 2: Make the tomato sauce
- Crush the tomatoes, red peppers and onions all good
- Cook the mixture, in a small pot apart. Cook the tomatoes for at least 10 minutes, the water should dried
Step 3: Do the Jollof
- In another pot, heat a little oil
- Fry the onion until the onions are caramelized
- Add the concentrated tomatoes and fry 2 to 3 minutes
- Then add the tomato and pepper mixture cooked beforehand. Season with curry, thyme, bay leaves.
- Pour the chicken juice. rectify the seasoning by adding a little salt and pepper more
- Add water and rice
- Cover the lid with aluminum foil before closing the pot
- Cook for 15 minutes without stirring and opening
