Yesterday, I told you about the Jollof Rice , a very popular recipe in Africa, but also in Nigeria. I wanted to continue in the same logic, and to share with you another recipe made from rice . Today I share with you the recipe for the Nigerian chicken chicken . A dish that I personally love too much.
I cook it all the time at home, maybe even 2 or times a month, eh, and so far, I don't even know why I have never shared the recipe for you. In short, as we often say better late than never .. lol
Good for those who do not know this recipe. The Fried Rice is simply a delicious rice dish, super simple to make. The rice is first cooked aside and then it is sautéed in the pan with a lot of vegetables, without adding tomatoes! Sometimes you can add meat, chicken, shrimp, or not! It depends on you!
Difference between: Nigerian Fried Rice & Asian Fried Rice
In the title of the recipe, I clearly specify the Fried Rice Nigerian , because there is a small difference between the Nigerian version and the version that everyone knows.
In the other recipe for the Fried Rice, the taste for rice comes from soy sauce while in this version here the taste comes from curry powder, chicken juice, thyme, and other seasoning that is added . I would present you the other version which is a faster, in another post!
Nigerian Fried Rice: an easy and practical recipe
The Fried Rice not only is it super easy to cook, it's good and it's also super practical lol. It's perfect as a midday dish at work 😉. I sometimes cook the Fried Rice only to eat at noon even 2 times a week at work. 😅
What I still like about this recipe is that everyone can use the ingredients they want, if you like this or that vegetables, you use it. If you don't like it, well you leave . What I do is that I even vary the ingredients all the time. I can add the green bean carrots one day, and the next time I add black beans, sweet corn, peas ! And it's still so delicious.
So I will be very open with you, I will give you the ingredients I used to have this result here, good after feel free to add your favorite vegetables or to remove certain vegetables that I put. In the recipe I used the chicken, but if you prefer the meat. Add the meat! It depends on your preferences too, it is you who eat ! lol
Tips to succeed in his Fried Rice
- Cook your rice the day before or even 2 hours before starting cooking . The rice should be completely cooled when you want to start mixing with the vegetables.
- Do not boil your rice too much before you fry it , otherwise you will get a sticky Fried Rice. I cook the rice for only 10 minutes
- The Fried Rice is better when the vegetables remain crunchy , so do not overcome your vegetables.
- To obtain the crisp appearance, you will have to increase heat to a high level during the frying process and stir continuously while you let the rice heat. It's better to use a “wok” if you have them. If not it does not matter either!
- You can also boil your rice with the chicken juice . If you have it at your disposal. Me in this recipe I did not yet have the chicken broth. I cooked the rice the day before, and the chicken the next day .. lol.

Easy Recipe Fried Rice with Nigerian version chicken
Ingredients
- 500 grams of rice
- 1 l of water to cook the rice
Marinade: Ginger + Garlic
- A fresh ginger can about 50 grams
- 5 garlic cloves
- 1 pepper
For chicken
- 1 kg chicken breast
- 500 ml water for cooking the chicken
- 2 tsp. green marinade
- 1 tsp. Ginger + crushed
- salt, pepper
- 1 onion to cut
For the green marinade:
- 1 onion
- some branch of parsley and basilica
- 3 garlic cloves
- 1 GOLD POVER
For the Fried Rice
- Cold cooked rice.
- 1 tsp. ginger and crushed garlic
- 1 tsp. green marinade
- 100 - 150 ml of chicken juice
- 3 green, red, yellow peppers
- 1 large onion clogged
- 200 grams optional black bean
- 200 grams of but gentle optional
- 100 gram optional pea
Instructions
Step 1: Cook the rice
- Cook the rice several hours before or the day before. I explain to you how I cook the rice here
Step 2: Cooking the chicken
- Cut the chicken into small dice
- Make the 2 marinades. Crush garlic, ginger and chili separately from the rest of the Green Marinade ingredients
- Macerate the chicken by adding Ginger+garlic and the green marinade. Add salt and pepper and let stand for 1 hour, if you have time
- In a pot, add the chicken, the water and cut the onion over it.
- Boil the chicken for about 15 minutes
- Drain, keep the cooking water and fry in a little oil
- To book
Step 3: Make the fried fry
- Cut your vegetables
- In a wok, add the onions and cut peppers. Let fry 2 - 3 minutes.
- Then add ginger and crushed garlic, curry, salt and pepper. Stir and let fry for about 3 minutes again
- Then add the green marinade, stir and add the rice
- Rectify the seasoning if necessary (adding either salt or pepper)
- Pour the chicken juice and stir
- Simmer 5 to 8 minutes. Just until the rice heats up and soaks condiments.
- Finally add chicken, corn, beans and peas.
- Stir gently and let simmer for 2 minutes again and it's ready!
