Ignam fries is a delicious salty dish that can be served as a starter or as an accompaniment . They are super crisp on the outside and soft inside. With a few simple ingredients, you can make this delicious dish in no time!

Ignam fries are not very common in Cameroon, at least I had never eaten when I was in the country, but in other countries in West Africa if . In Côte d'Ivoire, in Togo, Nigeria and even in Ghana, yam fries are generally served next to plantain (AlloCo) to accompany the grills.
I served my lumbering fries with a good braised fish , accompanied by chili and green condiments . Yum!
How to fry yam?
There are a lot of different methods to make yam fries. I will present you the 3 different ways of making fries and you can choose the one that will suit you.
Method 1: Directly fry the yam
- Peel, wash and cut the yam into a stick.
- Then dip the lumber pieces in the water for 5 minutes. Heat oil in a saucepan or fryer
- Fry the yam pieces for a few minutes.
- Then add 3 to 7 tablespoons of salt water to the pan and cook until a golden yellow color is obtained. The amount of water you add depends on the amount of yam fries that you fry. The addition of water to the oil allows you to cook the frying fries inside and not only outside.
This is the fastest method , of course, but it is not the method I use in this recipe because I find it a little difficult . It can be difficult to know when the yam is sufficiently cooked inside. To check if the yam fries are cooked, remove one from the oil and plant a fork. If it slides easily through, it is because it is cooked.
Method 2: Boil before switching to frying
- Peel, wash and cut the yam into a stick.
- Add the yam pieces to a saucepan and pour enough water to cover the yam.
- Add salt according to your taste and cook for 7 to 10 minutes.
- Once the yam is cooked, drain the water
- Fry the yam for 5 to 7 minutes or until the yam is golden yellow.
This method is a little longer than the previous one because you have to boil the yam before frying it. However, boiling the yam makes it possible to ensure that the yam is tender inside, and you therefore do not have to worry that the yam is not cooked enough. It is this method that I use in this recipe!
Method 3: Cooking in the oven
As a rule, food cooked in the oven contain fewer calories than if they were fried.
- Preheat the oven to 230.
- Cover a baking sheet with baking paper and grease it lightly with oil and put it aside.
- Peel, wash and cut the yam.
- Put the lummage pieces in a saucepan and pour enough water to cover the yam. Add salt according to your taste and cook for 7 to 10 minutes.
- When the yam is partially cooked, drain the water and place the pieces on the slightly greased plate (make sure they do not touch). Bake for 12 to 15 minutes or until golden, turning them from time to time.
In the end, it's up to you to decide if you want to fry or cook your yam in the oven .

How to remove the bitter taste of yam?
This is a problem that I had fluently and I thought it was I who did not know to choose a good yam tuber on the market. One day, I asked the question to my mother and she only told me that it was necessary to cut and throw the 2 ends of the yam before peel to boil. Since that day, I have never had this problem again!
How is yam eaten? With what to serve the yam?

- FRIT : As is the case in this post
- Bouilli : As we do most of the time in Cameroon. Just boil with dirty water like cassava
- Sautéed in a stew : it is a dish that my mom used to do at home. And I admit here that I did not really like this dish .. lol. Driven tubers, after peeling and washed, are only jumped in tomato stew, onion, green condiment and meats!
How to make the yam not blacken?
If you are used to cooking yams. You have already found that after a few minutes after peeling them. Ignomes tend to blacken. To avoid this, brush them with lemon juice so that they do not blacken.
What are the benefits of yam?

Ingredients
- 1 yam
- Salt
- Optional turmeric
- 500 ml water approximately
- Frying oil
Instructions
- Peel the yam and cut the 2 extremites to throw away
- Cut your yam into a stick.
