Here is a recipe made from Fonio which, I am sure, will please you. I discovered the fonio a few months ago, and I was so pleasantly surprised to discover all the benefits that this former African cereal has to offer to our body, that I decided to deepen my research, and to make a very detailed post on the Instagram , without even having tasted it before.
Since I live in Germany, and moreover in a small town, it is so difficult to be able to find it on the shelves of the Afroshop. So I had to wait patiently, to be able to buy it in France where, it is really more accessible, during the last Christmas holidays. And since I cooked it, I don't stop telling myself that I had to buy more than a kilo, so it's good 😋
What is Fonio?
The Fonio comes mainly from West Africa . She is gluten -free , and in addition, you can cook it as you want:
- You can have it as breakfast in the morning with fruits (cereal bowl style) or in the form of a porridge ( porridge) ,
- You can also completely use it instead of rice so accompanied it with all the sauces that you like;
- You can also simply jump in a pan with lots of other vegetables as I did in this recipe.

How to cook the fonio?
I opted for steam cooking
- Soak the fonio in 200 ml of water
- Let swell for 10 minutes then add 2 tablespoons of oil
- Put in the heat, for steam cooking for 10 minutes . And then remove from heat
- In a small glass of water, dissolve salt and sprinkle the liquid in the half -cooked fonio
- Form a small space in the middle, to add carrots and green beans. Return the fonio to steam for 10 other minutes
Sautéed fonio recipe
The recipe, not only is it too easy to make, in addition it is super fast . After cooking my fonio, I simply jumped in a pan, with the onions, peppers and other vegetables that I like.
Here I did it with the shrimp . Since I didn't have meat juice, I had to use a few c. soy sauce to avoid that all dryly dries. But if you want to use the meat, do not hesitate to book the cooking juices a little and use it instead of the soy sauce.

Sautéed fonio
Ingredients
- 300 grams of fonio
- 2 carrots
- 100 grams of green beans
- 200 grams of shrimp
- 300 ml of water
- 4 garlic cloves
- 5 tsp. oil
- 1 tomato
- 1 bell pepper
- 1 onion
- 250 grams of soft corn
- some parsley
- 3 tbsp optional soy sauce
- salt, pepper
Instructions
- Soak the fonio in 200 ml of water

- Meanwhile, cut your tomato vegetables, peppers, and onions
- In a small bowl, mix your shrimp with crushed garlic, salt and pepper.
- In a pan, add a few drops of oil and brown the shrimp in the oil. Fry for about 3 - 5 minutes, until it is golden
- Remove the shrimp from the heat, and now add the onions and the cut peppers. Simmer for 2 minutes
- Then add the cut tomato, and simmer for 2 minutes
- Add 3 tablespoons of soy sauce, salt and pepper and add the cooked fonio with its carrots and green beans
- Simmer 3 to 5 minutes, then add the shrimp, then the soft corn and finally the finely cut parsley
- Serve
