In African cuisine, FUFU occupies the same position as potato puree in traditional European cuisine 😄 This base supplement is served with almost all kinds of sauces. Depending on the country or culture, couscous/or Foufou is preparing in a different way. You can make couscous based on cassava flour, corn flour, rice, millet , macabo. etc
What is Foutou banana?
Today, I have a rapid foutou banana recipe made with a blender . It is a couscous made from plantains and cassava . It is very popular in Ivory Coast and Ghana. And I assure you that it is frankly good, at home in Cameroon, the Foutou banana is not at all known. I don't even think that in Cameroon, we do the couscous based on 2 different ingredients.
How to cook the Foutou banana?
There are several ways to make this recipe:
- Either you buy the semolina directly ready to be ready in Afro-shops, that you will have to mix just with hot water,
- Either you buy the Emoule du Foutou, with ripe plantains . So you should cook the plantain, then crush and add to the cooking of the Foutou with the semolina. I would come back later with the exact recipe, but I hope you can already get an idea of what I'm talking about. It will make the Foutou less bland at the end and more sweet . Check the recipe here!
- Either you celebrate like me, and the Foutou is really more delicious! You use a mixer to crush everything after boiled. This really makes the preparation easy, because pounding with a pestle in a traditional way takes a lot of time.
Foutou banana is generally accompanied by a sauce, called clear sauce (like on the photo 👇🏿) or seed sauce

- 2 Cassava tubers
- 4 – 5 Plantains
- water
Instructions
- Peel the plantains and cassava.
- Cut the cassava and plantains into small cubes to pound easily later.
- In a pot start by putting the plantain, then cassava and rest assured to cover the pot with water. The water must be either at the same level that the content is slightly overflowing.
- After about 15 minutes of cooking, check the cooking of the cassava and plantain with a fork. If cassava and plantain can be split easily, it is because it is ready.
- Pour the surplus of water and allow the plantain and cassava to dry for a few minutes
- In the mixer robot, start by crushing only cassava, to the point of taking a paste and then remove. Then crush the plantain, and finally mix the 2 always using a mixer robot
- After mixing well, trying to form smooth balls using a hollow plate, wetting your hands regularly in the water to prevent its glue
