After the recipe for baobab juice , and bissap juice that I shared here in the previous weeks. I come back this time with a drink just as popular as the other 2, the still called Gnamakoudji.
The word gnamakoudji would be of Dioula origin, among Ivorians and would mean: spicy water, or spicy water! Because it is a drink that stings anyway 😄
This African drink is very very popular in West Africa in general. It is consumed in Senegal, Mali, Benin, Côte d'Ivoire and even also in Cameroon!
How to make ginger juice?
Ginger juice recipe
This juice is mainly made from fresh ginger and water.
But there are several variations of the recipe, we have for example:
- The pineapple ginger juice : just add the freshly pressed pineapple juice at the end of its preparation or crush the ginger with the pineapple at the start. You can also simply buy a pineapple juice with 100% fruit at the supermarket to add it 😉
- Lemon ginger juice : this is the most widespread recipe, and it is also this recipe that I will offer you in this post. You just have to launch the lemon districts before letting macerate. And I personally, I find that the combination of lemon and ginger goes very well together!
- Cameroon's ginger juice : here the sugar is first caramelized, before being added in the juice, after the infusion. The color of the juice will then be darker compared to those made with normal sugar
It should be noted that, in the traditional recipe , we do not boil the mixture of water and ginger. But in this recipe, I decided to add an additional step which consists in bringing the mixture to a boil just for a short time before adding the sugar.
This additional step will allow me not only to neutralize any unwanted bacteria that could have slipped into the drink, but also to infuse the mint and lemon.
Yes, I love to add mint to my homemade drinks! I find that it adds a little more refreshing .. but it's optional huh?!
How to extract fresh ginger juice?
For those who have a powerful blender , you can simply do like me: peel the ginger, cut it finely and mix it with water in the machine.
Another alternative would be to use a juice extractor , if you have it: it will make your task easier, since you will no longer need to filter.
conservation
Ginger juice can be kept up to 4-5 days in the refrigerator if it is closed in a bottle. But to better benefit from flavor and quality, it is preferable to consume it within 24 to 48 hours after its infusion
