As I said in my previous post, where I presented the recipe for chili . It was in Cameroon that I also learned this green sauce recipe that I am about to present you in this post.
There are so many different recipes for making these accompaniment sauces . Some do their sauce just with parsley and mayonnaise (without going through cooking), others make a sauce with parsley, coriander, in short with many other green condiment (via cooking).
I offer you a green Cameroonian style sauce . It is a simple and easy to make recipe with very few ingredients.
Cameroonian green sauce recipe
I myself was surprised when the braised fish saleswoman told me the ingredients she used to make her green sauce. I asked her if that is really all what use and she told me that yes 😅. Like what sometimes, do not complicate too much in the kitchen
Ingredient
As an ingredient we will just need:
- leek,
- onion,
- garlic
- D ' Akpi still called Njansang in Cameroon
- a white pepper
And that's it! We don't complicate! LOL .. in short the complete recipe is as usual at the bottom . I made this recipe in very small quantities, but if you want to do more, you just have to increase the amount of ingredients.
Does the green sauce freeze?
I want to specify that this sauce does not keep long in the refrigerator, 2 days or max 3 days . If you have a lot of sauce remains, remember to put them in the freezer and freeze them first in an ice cube tray, in order to obtain small portions . Before putting them in a freezing bag so as not to have to warm up everything when you want to use only a small amount.
With what to accompany your green sauce?
It is perfect for accompanying your grills, meats . It is a green sauce for fish as to serve the attiéke , for braised chicken ! Or even to serve the lamb dibi as I did here 😊
And for those who do not support the spicy sauces (the chili) too much, you will love to accompany your grills with this sauce.

Cameroonian green sauce
Ingredients
- 1 big onion
- some leek
- 5 garlic cloves
- 5 Akpi seeds
- 1 to 2 tbsp. oil
- pepper
- salt
Instructions
- Start by crushing the Akpi seeds in a small mortar or on the crushing stone before switching to the mixer with the other ingredients
- Then crush all the ingredients together with a little water. Water should just cover the ingredients barely
- Cook for about 10 minutes over low heat. Just add very little water if necessary during cooking. just to prevent the sauce from starting to burn
- After 10 minutes, as soon as you have noticed, that the sauce begins to stick in the bottom of the pot, pour the oil and let fry 1 to 2 minutes
- Adjust the seasoning by adding the salt, pepper
- Serve cold with the grills. Enjoy your food
