The recipe for potatoes , which I present to you today comes straight from my home, more precisely in the region of West Cameroon, it is a dish that reminds me a lot of my holidays with my grandmother because the pill of apple almost never missed on the menu of the week, and as we were numerous at home (several grandchildren) , it was necessary that the quantity was really sufficient, which makes more work😃.
We found ourselves to peel the potatoes at least for 2 hours all together. It should be noted that my grandmother chose a very special variety of apple. The potatoes were really very small. It is true that this type of apple is very low in water, but that did not facilitate our task…. 😂
How to cook potatoes? ::
To make this recipe for crushed potatoes , it will just take 4 ingredients and voila. The apples of course, black beans, palm oil and salt and pepper (optional).
After cooking the beans, I keep another part of the cooking water to cook the potatoes. This is what my grandmother was doing and that's what I took up in the recipe. This step is however optional: you can also cook the potatoes normally with water.

The only step that takes a little time here is cooking black beans. You have to soak the beans the day before or a few hours before they are a little more soft. During cooking, I also add gemal salt or potash.

Potato
Ingredients
- 500 g black bean
- 3 kg of potatoes
- 200 ml palm oil
- 1 tbsp of salt
- 2 optional peppers
- 2 l of water
Instructions
- Dip the beans the day before or minimum 2 hours before cooking.
- Boil the beans, with salt. The cooking water must be sufficiently salty. If you don't have a pressure cooker, cooking will be at least 45 minutes.
- Meanwhile, peel the apples.
- Then drain the beans and keep your cooking water. In the same pot, add the potatoes, and the cooking water from the beans.
- Still salt if necessary.
- After about 20 min, check the cooking of the apples using a fork. If the apples crush easily, which they are cooked, pour the excess cooking water and allow to dry over the heat for 1 min.
- Crush your pepper.
- Then add the beans ...
- Then red oil ...
- and crushed peppers. Simmer about 10 min
- Mix well together and start has crushed.
- I had reserved a few beans to add to the end. This step is optional, it's just a question of having non -crushed seeds. I mix everything with a spatula.
- You can serve directly….
- or heat in the pan with the onions and a few drops of oil. After a few minutes of time. Do not hesitate to turn with the help of a spatula to grill the other side. Enjoy your food!!!!!!
