African tomato sauce - A meal so simple to do, so delicious and perfect as a meal for evening dinner, or even for a holiday meal . Me, the tomato sauce, always makes me think of our Christmas meals when I was little! 😃 This dish almost never lacked in the Noë L menu! And this was not only the case with the house eh .. even with the neighbors, or with friends ! The dish was present at the table!
Tomato sauce is a popular dish everywhere in Africa, not only in Cameroon, whether in Nigeria, Ghana or even East Africa, the dish is present and loved.
How to make the tomato sauce?
The recipe for tomato sauce is very easy I assure you, after gilding the chicken , we simmer the tomatoes and onions all slowly together to the end of a heavy sauce. And then when the oil rises to the surface, you know it's cooked!
Me in this recipe I will offer you a version of the Nigerian tomato sauce , but also a little Cameroonian because I use the Akpi , a spice that never lacks in the recipe for Cameroonian tomato sauce.
And the Nigerian trait that I add is the use of a lot of red pepper that I will grill in the oven with the tomatoes and the onion beforehand.
All this aims to reduce the water from the vegetables and therefore also reduce cooking time!
You even look at how in the photo , the crushed tomato and pepper mixture looks thicker!
Like other spice I will use, the curry and the thyme which do not necessarily enter the Cameroonian version, but it will allow me to further enhance the taste!
Ingredients African tomato sauce
My ingredients are therefore:
Chicken thighs : You can use thighs or chicken drums, and the cooking process will be the same. If you are using chicken white, it may fall in disarray in the sauce. In Cameroon we even use whole chicken
Vegetables : tomato, red pepper pepper and onion. Here are the basic ingredients of the tomato sauce, but I also add some fresh basil leaves towards the end of cooking. For me the basil and the tomato get too well!
Spices : garlic, akpi, thyme, curry, penja pepper , the secret (mixture of Cameroonian spices) and salt. I do not use a seasoning cube in my kitchen, but you can add them if you want
How long to keep the tomato sauce in the refrigerator?
The tomato sauce generally keeps 1 to 2 days in the refrigerator in an airtight box. Just reheat it on the stove when serving, just adding a little water.
With what to serve the tomato sauce?
As I said at the start, the tomato sauce was once considered as an essential element of Christmas tables in Cameroon. - A festive meal. In the menus, the tomato sauce is generally served with white rice or any other boiled stumble like (plantain bananas, yams, etc.) but also with spaghetti, without forgetting plantain fries!

Rice African tomato sauce
Ingredients
- 1 kg of chicken thigh
- 6 tomatoes
- 2 red pepper
- 3 Small onion + 1 onion to cut
- 6 garlic cloves
- some basil branches
- About 500 ml of water
- 1 in Garlic in powdered garlic
- 1 in ginger café powder
- 1 secret coffee
- 1 in pepper
- 1 a thyme
- 2 in Curry
- 6 Akpi seeds
- frying oil
Instructions
- Macerate the chicken for about 1 hour with the powdered spices including garlic, ginger, secret, dry pepper.
- Wash and cut your vegetables (tomatoes, onion and pepper) roughly. Grill them in the oven for 40 min see 1 hour, while the chicken is cool
- Crush the te everything in a blender
- Fry the chicken in the hot oil, then divide the frying oil in 2 to continue cooking the tomato sauce
- Then fry the onion cut for about 1 minute, then pour the crushed tomatoes directly
- Leave for 5 to 10 minutes. Don't burn!
- Meanwhile crush the basil branches, garlic and akpi together
- When the tomato is already starting to hang on to the bottom of the pot, add the water, the crushed basil with the garlic, the pieces of fried chicken, the curry, the salt at your convenience, the pepper and the thyme
- Lower the heat and simmer over low heat for 30 to 40 minutes, until the oil rises to the surface
- At the end of cooking add a little finely cut basil, adjust the seasoning of salt and pepper and serve hot with rice.
