Chicken Yassa Origin
I'm sure everyone here knows the famous Yassa 😏 chicken. This African dish that has really exported to the international. According to Wikipedia , the Yassa is a word Creole of Casamance which means frying. It is therefore a sauce made from onion and fried or grilled chicken. The dish is from Senegal, the country of Teranga !
And by the way, did you know that we can also do the Yassa with meat? In this case we say Yassa Yapp ; Or even the Yassa with the grilled fish ? I myself did not know before writing this post ..lol the Yassa Poisson tempts me well, I think I try it very soon by the way 🙂
Traditional Yassa Chicken
The base of the Yassa is the onions and the lemon. These 2 ingredients are compulsory. And these are the 2 ingredients that are used in the original Yassa chicken recipe
So in the traditional Yassa recipe, we don't add olive; No mustard . All these small modifications came after time, and really I find that adding the mustard even enhances the taste of the dish . I got away from the traditional version in this recipe, since I add the mustard 😅. Olives on the other hand I did not use 😌
Traditionally also the Yassa chicken is toasted on coal, not fried in oil as everyone does. Because even the smoke of the coal brings another taste to the dish!
Since I don't have a wood fire, or even barbecue. I burned my chicken in the oven.
So for those who want to make the traditional Yassa chicken, remember to use a barbecue or even the oven and leave the mustard and the olives!

How to cook the Yassa chicken? : Tips!
1st tip: that everyone ignores is to marinate the chicken marinated all night. I assure you that the taste of the Yassa with a marinated chicken and different from that without for the marinade we do not complicate.
2nd tip: as we use a lot of onions in this recipe, it is better to dip the onions in water to avoid crying too much. For me often it is a turn to cut the onions 😂
3rd tip: roll the lemon a bit on the worktop, to be able to press well easily. It was my mother who taught me this little tip
4th tip: For those like me who are not used to eating a lemon salted dish , add a little sugar (very little) just to reduce the taste of acidity.
What rice for chicken yassa?
The Yassa chicken is accompanied very well with broken rice . For those who find it, remember to cook rather in a couscoussier. But otherwise, normal rice like basmati rice also goes very well!

- 1 lemon
- 1 tsp. optional mustard
- 3 big onions for the yassa
- 1 small onion for chicken
- 1 kg of chicken I chose the wings, and the thighs
- 2 pepper
- 1 bay leaf
- 1 garlic
- salt pepper
- some branch of parsley
- optional ginger
Instructions
- Clean the chicken well
- Make the crushed chicken marinade: parsley, 1 onion, garlic, ginger, chili together. Without adding the water, but rather the oil
- Mix the chicken with part of the marinade, mustard, salt, pepper, and ½ lemon juice
- Let the chicken marinate overnight or minimum 2 hours for those who did not have time to do the day before
- Then grill the chicken in the oven or barbecue
- Cut your onions into strips
- In a pot, heat a little oil and fry your onions by adding the bay leaf and the pepper. The onions must be caramelized. I fried my onions for 20 minutes, stirring regularly
- Meanwhile, cook the rice.
- As soon as the onions are translucent, add the rest of the marinade, a little water, and the juice of a lemon 1⁄2. Adjust the seasoning of salt and pepper
- Mix well and cook for 20 min on a low heat
- Add the grilled chicken and simmer for 10 min always on a low heat
