It is therefore the same principle, in this post I will present another recipe for green sauce “Express” , in short the recipe for green condiments for braised fish as they say in Cameroon, which will also act as a green seasoning.

You can also make your green sauce through cooking, as is the case today.

Green condiment ingredients
Good back to the recipe of the day. As an ingredient, I use:
- Green chives or onion
- The onions
- garlic
- ginger
- Pébé or false African nutmeg : it is a very important ingredient in this recipe. She will not only enhance the taste of your seasoning, and thanks to this spice your braised fish will also have a better taste
- Ndjansang or Akpi
- pepper and salt
I still want to recall here that in my kitchen I do not use the seasoning cubes , so do not be surprised when you will see that there is no cube in the list of ingredients. But feel free, to add if you want!
Cameroon green condiment recipe
The recipe is very very easy to make . Too easy even, after having crushed the ingredients all together we go directly to cooking. Cooking is not at all long and is done in 2 small steps:
- First you must cook your green seasoning with very little water
- Second, you have to fry : when you notice that the water has dried well and the green condiments are already clinging to the bottom of the pot, you have to add oil and fry for 1 to 2 min. This step is very important
In short, the complete recipe is as usual at the bottom of the post . I made this recipe in very small quantities, but if you want to do more, you just have to increase the amount of ingredients.
Does the green sauce freeze?
I want to specify that this sauce does not keep long in the refrigerator, 2 days or max 3 days. If you have a lot of sauce remains, remember to put them in the freezer and freeze them first in an ice cube tray, in order to obtain small portions. Before putting them in a freezing bag so as not to have to warm up everything when you want to use only a small amount.
With what to accompany your green sauce?
It is perfect for accompanying your grills, meats. It is a green sauce for braised fish as to serve the attiéké , for braised chicken! Or even to serve the lamb . It is also a green seasoning for braised fish.

Green condiment recipe for braised fish (Cameroon)
Ingredients
- 3 chips
- 2 onions
- 10 garlic cloves
- a small ginger
- 3 pebe
- 5 akpi
- pepper and salt
- 3-5 C, with oil
Instructions
- Start by crushing the Akpi and Pébé seeds in a small mortar or on the crushing stone before switching to the mixer with the other ingredients
- Then crush all the ingredients together with a little water. Water should just cover the ingredients barely
- Cook for about 10 minutes over low heat. Just add very little water if necessary during cooking, just to prevent the sauce from starting to burn
- After 10 minutes, as soon as you have noticed, that the sauce begins to stick in the bottom of the pot
- Pour the oil and let fry 1 to 2 minutes
- Adjust the seasoning by adding the salt, pepper
- Serve cold with the grills. Enjoy your food
